went for perch caught bows

Bow dinners are great !   I just cleaned (scaled) a Niagara R.  1.5 lb bow  ....tomorrow's dinner !  Fillets  will be baked with skin on with tomato , onion , pepper & spices .  Nice change from perch done in the frying pan . 

Chef ryk....  any advice on what is a good spice to flavour bows ?  B)

We have been using lemon -pepper .....

Pat fish dry; place on greased rimmed baking sheet. In small bowl, combine mayonnaise, mustard, salt and pepper; spread on each fillet. Broil 6 inches (15 cm) from heat until fish flakes easily when tested, about 6 minutes. Sprinkle with parsley

We oven baked the fillet , wrapped in parchment paper on a cookie sheet today . My wife bought a jar of basil pesto & spread a thin coating on the fillet , then a sprinkle of lemon & herb spice , baked at 350F for 10 min, then opened up the paper & gave it about 5 min.more ,until it was flaky . It was excellent ! 

.....need to talk to my trout man .......B)
