Got the recipe for the jerky years ago off a post on the OFAH website - it was called t-birds jerky.  Has hot sauce in it, so a bit nippy. I use goose, turkey or venison to make batches each year.

when I used to go moose hunting years ago I would make about 10 Lbs. of beef jerky to take along for the week’s hunt trip.

Of course, they was Also back in the days when you could afford 10 Lbs. of beef!!
