In response to your query.

Take one breast, slice like thin liver or sandwich steak. Tenderize aggressively. Place in your fave marinade for 6 hours

My marinade base is 2 parts oil to 1 part wine/juice/ or beer. Mix enough to cover the meat.

To the liquid add 1 chopped garlic segment, 1/4 tsps of salt, pepper, poultry seasoning.

In a buttered pan fry sliced onions and red peppers til soft and brown, then pan fry meat til just done.

Do not over cook unless you like shoe leather.

Thank you bigugli , i did exactly what you said and it came delicious, I didnot use the poultry seasoning because I didnot have any, Only difference is I added in some jalepeno peppers with the onions. Cant wait to get some more geese next Saturday!!
